Preheat oven to 350 degrees.
Thoroughly mix the following ingredients in a large mixing bowl.
1 cup unsweetened dried diced pineapple
1 cup unsweetened shredded coconut
1/2 cup sugar
1 13.5 ounce (400mL) can coconut milk
1/4 cup small pearl tapioca
3 large eggs
1/4 teaspoon salt
2 teaspoons vanilla extract
1/4 cup The Kraken black spiced rum
Pour mixture into:
1 gluten free pie shell
Bake at 350 degrees for 45 to 50 minutes.
Gluten free.
Ovo-lacto vegetarian.
